I currently don't have the luxury to have a strict "AI, not even once" policy too (at work). And as a former cogsci/AI student, I'm too interested by the topic – but disgusted by the industry. I'm in line with the "extra background" too (lot of moral self-reflexions), and try to keep a critical and attentive posture.
I use GH copilot at work since the private beta, it's not a bad solution if you use VSCode:
It's not that "easy" to use, and being efficient with them is a bit far from the hype and inflated discourses you see online.

Carefully craft your project's context file (claude.md, copilot-instructions.md, whatever). Stay away from hand-off tools/workflow (often promoted by CLI tools), keep yourself in the loop, always challenge the answers and beware of models idiosyncrasies.
My most efficient uses are mostly:
Today we visited a french nuclear submarine from the late 60s, early 70s (Le Redoutable).
Pretty impressive aesthetically and engineering-wise, even if I’m not that much in war things.

Pas beaucoup de #vélo depuis mon arrivée en vacances: pour l’instant le planning famille ne s’y prête pas et il y a un vent pas possible (65km/h !). Les quelques petits trajets utilitaires que j’ai fait étaient dantesques.
Je suis un peu frustré: le bocage du #Cotentin est vraiment très beau, très vallonné et plein de petits chemins creux fleuris.
Bon, la rando à pieds c’est bien aussi :)
Do you feel the same?
Yes, a bit. I tend to keep the usage on boring/administrative/glue code or when stuck (because I'm lacking senior colleagues right now...). My usage is still very low (when I compare token consumptions with other people).
Do have a plan if it's ever starts happening to you?
Professionally, not really. That said, I often rework the machine output, sometimes quite a lot. On personal level, yes, I try (on free time... :-/ ) to dabble with other langs (OCaml, Rust), without any text synthesizer (I'm also getting tired of the cruftiness of Python/JS/TS).
On the atrophy and consequences topic, I'm much more worried by everybody's everyday naive usages that my eldest daughter and my wife report to me. I almost never use those text synthesizers on other purposes than software-eng. topics.
Printed 100+ pictures from my archives and spent the evening selecting and playing. Investigating the effect of associations, the relationships with the format on what it does to the eye and the soul.
Oh my. I should have done that before. It’s so different and much more opening than experimenting trapped in a screen. It’s quicker too.
Also, lot of self-reflections on what I try/would like to “tell”.
