The flavor of gumbo is the roux. You want to go low and slow and get it very dark brown. Lots of stirring with a wooden spoon. I go equal parts fat and flour for my roux. Once the roux is ready dump in your trinity and okra if you are using it. Then stock and whatever meats you have in the fridge. Gumbo is like fried rice. A fridge clean out.

@trabern@mas.to we had bumper crops of apricots in Abq this year. Trees that don't normally produce went nuts too. I didn't know we had so many trees close to the house. Turned the "last" batch into apricot crumble a couple weeks ago. But then the neighbor brought us another gallon of them this week. No such thing as too many apricots. Good luck with your curd.

@mayintoronto@beige.party @farah@beige.party seconding this. I feed two autistic kids and a spouse and keeping them fed is challenging. They report sensory issues with textures and smells. And those things can shift making food good one day no longer good the next. They have proprioception stuff where their bodies don't tell them they are hungry. So they will not eat unless we set alarms or remind them (gently). Often they go past the point of hungry as a result and nothing sounds good / melt down imminent.

@ai6yr@m.ai6yr.org I grew up near here. Texas law lets you build up to the dune line. After a major storm, the sandy coast changes and dunes may recede from the gulf leaving your home and any property you may have owned to become state of Texas property (condemned). The houses have to be at minimum x feet above sea level to be insured so they are built on stilts. Anything below that height isn't insured. The storm surge rips under the houses so breakaway stairs to keep your house on its perch.

It was completely dry for most of the summer last year for the first time in the 30 years I've lived here. Likely for the first time in the over 300 years people have lived here. Everything is fine. Right?

@Em0nM4stodon@infosec.exchange AI note taking systems are bad at their jobs. They don't reliably transcribe especially with jargon filled and non native english speakers. The summaries do not capture key decisions or social nuances ( or the whole damn point of putting people together to hash things out). Who proposed the decision? Who agreed to it? Who was silent, on mute, or absent when the decision was made? What was the justification? Even "what was the actual decision" (words matter)?
