Morocco's street food gave me a lot to discover! Many of the very popular carts were selling a sandwich stuffed with cream cheese, garnishes, and either chickpeas (pictured) or "kalinti" which is made of chickpea-flour and is basically a "vegan omelette" in taste/texture. Visited Moychay tea house in #Amsterdam. Very nice place. My #tea was an "experimental" semi-fermented gaba red tea from Georgia... I know, lots of words. It was v tasty and calming. #nom

Kodo millet congee - this pure-tasting millet porridge is a great background on which to paint sharp flavours. Spring onions, garlic, curry leaf, chilli. #kitchendiary #millet #vegan

Drank some lovely herbal teas from Iran with a colleague today. A black tea flavoured with fragrant orange(?) blossom. And new to me is this "mallow" flower which brews to a radioactive blue colour. #tea #iran #mallow

Was in Madrid this weekend. Had a lovely coffee cocktail at Cafelito: the "campesino" (Colombian inspired) with honey, cinnamon stick, and panela (a citrus fruit). #nom #coffee #madrid

Pickled cauliflower, butterbean purée, charred lettuce, and za'atar flatbread - #nom! I wouldn't have understood this at all a few years ago, but these flavours are fabulous. Inspired by Bubala restaurant I guess. #vegetarian #kitchendiary
