Bin so sauer.

Curtido (central American spiced sauerkraut, a big hit in my family),
cabbage and radish kimchi,
hot sauce and
gherkins at the end of summer #fermentation
@LifeTimeCooking@mastodon.au should I use that to get started with Koji and Miso? 😜

@sundogplanets @LokeMani here‘s ours, planted in October. It’s not as cold here, Cologne/Germany, but we did go to minus 10 c at some point. This is garlic we got from a Kazakh friend, who brought this over from Central Asia, as he thinks Western Europe garlic is too weak. (The stuff you can buy here is either grown in southern Spain, or, inexplicably, China). So this is Garlic that should be able to copy with very low temps. Also, it’s huge.
It’s early spring, and I’m out of fermented veggies. Cabbage is out of season so no more kraut variations until summer. Salt gherkins are even further away.
What can I do to give me that sour fix? I need something crunchy! Tips against #fermentation withdrawal symptoms?
