Pour avoir une chance de maîtriser ce que font vos ordinateurs, utilisez des distributions de logiciels qui s'engagent à n'inclure aucun morceau de logiciel pour lequel il y a de telles restrictions: Trisquel, Parabola, Guix, PureOS.

I have installed Debian with #Freedombox and used the web interface (called plinth) to activate postfix/dovecot and added in the DNS what it told me to. It has been working fine for two years, apart from two or three manual reboot of my rockpro64.

This seems like a perfect excuse to lock down users, it is bad regardless who controls it. Security should not rely on restricting the user freedom.
