An 11th century knight was like, the big strong guy in the village who sometimes gets his buddies together and kills a boar to share with everyone, and occasionally a big warlord will call him up to raid those assholes on the other side of the forest (or to protect everyone from being raided by the assholes on the other side of the forest). A 15th century knight was a hereditary nobleman who did politics and probably paid cash in lieu of direct military service.

Obligatory critical commentary: ACAB has always applied to knights. However, there's an interesting material dimension to this literature, because a lot of it was written during the time that knighthood was a) associated with noble class status and b) declining as a fixture of medieval warfare. Pre 12th century, most knights were closer to the level of "peasant who owns horses and a sword." They lived in much closer contact with the common people than later knights did.

The main target of this criticism is not necessarily individual vegans (though vegans in the military are fair fucking game) or veganism as an ideology, but the kind of spineless neoliberal consumer-as-activist ideology that leads to a demand for vegan military rations. It's the same mindset that gives us a Raytheon booth at Pride

"But what if the person eating the ration is fighting in a defensive war against an aggressor?" is just about the ONLY situation where a vegan military ration is not completely absurd. However, let's put on our thinking caps for a second. If you are fighting a defensive war, like a REAL defensive war, the potential animal ethics of your food are going to be a secondary concern
