Don’t pay for Windows antivirus apps. It comes with it’s own.
None of it is any better than Defender. When Defender came on the scene, every enterprise I’ve worked in stopped buying AV licenses - thet have that little value.
Video and audio are unlikely to contain a virus that Defender wouldn’t catch (say an executable renamed as an mp3) which just wouldn’t launch anyway.
The one thing you can do to improve your security is to stop running as admin on Windows (which the first user account is by default and necessity).
Even better is to test anything suspicious in a VM.
Using Linux for this is the best approach all around. Get an old laptop, run Linux. Most tools are developed for Linux first anyway.

*Every* enterprise level org I've worked for has had strong rules about *not* engaging after-hours.
They understand of you're working after hours you're going to be useless the next day. Consistency is more important.

With some very specific exceptions, natural fibers are far better.
Give me a wool blanket or sweater (jumper in your terms I believe).
Wool is freakin magic.
My only exception is workout gear - the specialty synthetics are fantastic.

Some basic math - we're a species who's body generates heat, so works best in conditions with a temperature lower than our body temp. Otherwise we need to sweat to efficiently transfer heat.

And it really doesn't take 9 months to make extract. 3 months at most - I make my own every year (use a LOT of it). It's faster with a higher concentration of alcohol, but I've found even standard strength works fine.

Why do you want ECC? (Hint: unless you're running a business database dealing with financials, you don't need it). I've run Windows server on desktop hardware since the 90's with no issues, and today's hardware is far better than what we had then.
The reason people settle on NUCs and SFF desktops is *power*. They virtually sip watts.
I don't usually recommend specifics for someone but rather ideas and ways to look at your requirements, but given your requirements (20 TB), it would be worth considering a commercial NAS, or at least a NAS enclosure running a NAS OS like UnRAID or TrueNAS.
Expansion is generally not something I'd think about for a NAS (though it can be done today). I expand my NAS once a year (swap out one drive) but I keep 3 local copies - so if it failed I can restore locally rather than from a cloud backup.
So your data lives on a NAS, and you can then either run your services there (they mostly support containers, etc these days), but I'd get a NUC or SFF to host that stuff. It makes for nice separation and gives you some flexibility.
Back to SFF and NUC - my last desktop hardware *idled* at 100 watts. It was visible on my power bill and used more power than my lights or just about any other single device other than heat or stove.
My SFF server idles at just under 20 watts and *peaks* at 80 when I'm converting videos. It currently has 8Tb of storage, but I could easily get 20 in there, it would just be expensive.
Oh, and a good NAS can spin down drives to save power when idle, which for most of us is like 90% of the time (I have an ancient NAS as redundancy that does this - it idles around 5w).

Seems there are 2 kinds - video links with almost no text, just farming visits, and video links with a wall of text.
Both suck. Videos, in general, suck.
So much of what goes on here needs text, lots of it. Video is slow and cumbersome.

The problem is they are almost never good, as everyone can read the same info 4x faster than someone can present it (best case), and 10x faster isn't unusual.
Source: Former technical trainer - I've read a lot about instructional methodologies. Video is the lowest common denominator that's all. It can be useful for things that have a visual component, and self hosting has very little of that.

Would like to read more on all this, curious about your statement "need to evaporate to extract" - I've never done this, and my vanilla extract is *far* better than any store bought stuff (I've experimented with many different beans and alcohols).

I've made it with both high alcohol concentration (everclear) and regular strength vodka - in my opinion there's no difference.
There's also no difference after 3 months. I've tasted at 30/60/90 days and 3/6/9 months (many times, many different beans, different alcohols). 90 days is the sweet spot, beyond that it's no more complex, no stronger vanilla flavor.
I'm sure someone's going to disagree - this is my opinion based on about 15 years of on-going vanilla making/testing.

Disagree all you want - ECC has no bearing outside of high-resiliency databases.
I say this having nearly 4 decades in enterprise - ECC only matters then.
OP is definitely not doing anything requiring ECC, recommending it is just wasting money.

Library card costs me nothing. My tax dollars pay for the local library.
It has inter-library loan with lots of places.
Local colleges/universities will also let you (at a minimum) use books and tools at the library, and usually give you a card too.
My media collection is mostly gathered from my local library.
The there's things like Kanopy that you mentioned. There's a few other similar systems.

Yea, I find needing to know the IP annoying, but by no means difficult or problematic.
I do wish many devs would put some effort into discovery (with Apple stuff, Bonjour works fine, everything else there's mDNS).
Thankfully the Jellyfin Tizen app (Samsung) at least remembers servers and shows them by name after connecting by IP.

You should be able to do it all via USB cable and ADB, *if* you have USB debugging enabled *and* the PC has been approved on the phone. All that will require a functioning screen.
But once those 3 things are set, the stock OS will flash from the PC using the script included with it.
So download the factory OS from Google, extract it. Ensure ADB is available on the PC.
Once the screen is working, enable USB debugging, connect to PC, approve PC, then use ADB on PC to send a reboot to recovery command (I think it's: adb reboot recovery).
Once in recovery the flash script can be run on the PC.
Edit: I've done this dozens of times - the flashing script simply overwrites the partitions with the factory software.

So you’re saying that the current Minecraft servers are all running on desktop hardware and not on standard U-chassis servers in racks in data centers?
If anything I’d expect them. To run virtualized on standard rack servers.
Something here doesn’t add up. I don’t buy that enterprise server hardware that can out-perform desktop hardware by orders of magnitude can’t do what you need - especially since that’s surely how the existing servers run.
If this single-threading performance is really en issue, run some kind of virtualization on a rack server, build a VM with the exact hardware config you need, and the host hardware will make it happen (which I’d bet is exactly how current servers are run, because then they can be moved/Load balanced dynamically without missing a beat).
I currently have both single-core, single-cpu VM’s and multi-core, multi-cpu VM’s running on the same host for test purposes. The VM has no idea it’s virtual hardware is actually run on a different multi-cpu/core host.
Check out xcp-ng - it’s probably the best (arguable) open source virtualization platform today. VMware server can definitely do this, if you have a license.
